Tuesdays with Dorie- World Peace Cookies

Hello February, woa is it really possible we are here already?? Where does the time go?? Too fast I say!! To kick off this months Tuesdays with Dorie, Jessica of Cookbookhabit chose World Peace Cookies. (please see Jessica's blog for the recipe or see page 138 in the book) Traditionally I have never been a fan of chocolate cookies. Now don't get me wrong... I heart chocolate just as much as the next girl, but chocolate cookies have never really "spoken" to me. So when I saw this recipe, of course my first thought was that I might not be a fan. But boy was I wrong!These cookies really were just divine. They were the perfect combination of salty and sweet! And they had a "shortbread' ish" texture which was a nice surprise. The recipe was simple to put together, instead of chocolate chips... I chopped up some semi sweet baking squares I had left over from my holiday baking. I also substituted gluten free (Pamela's mix) flour for all purpose, & was happy to see that was an easy switch. The World Peace Cookies were an absolute hit with everyone I gave them away too (of course I had to get them out of my house asap, for fear of having to add 20 more workouts to my week if I ate them all, ha).... This one is a keeper, and without a doubt will be repeated! Great choice, Jessica!

Yeah, I should have gotten them out of the house. Instead, I kept a stash in the freezer, just in case. Ha! Your cookies look fabulous. :)

The pictures are great, I love all of that color with the cookies. That's the thing about cookies for me...it's so hard to eat just one! Well done.

Don't you think these are totally worth the calories. I mean I'm on my way to the gym as I type. This is the only cookie I can't resist. So delish and I love knowing I can make these gluten free for my friend. Do you have any other subs for the flour?

Thanks everyone for the lovely comments! Amy Ruth- I used Pamela's Gluten Free Baking Mix. http://www.amazon.com/Pamelas-Products-Ultimate-24-Ounce-Packages/dp/B000DZDJ0K Sometimes the switch works seemlessly & sometimes it bombs!! But that is part of the fun... When using Pamela's you need to adjust the baking soda/powder ingredients. The leavening in Pamela's is equivalent to 1 tsp baking powder & 1/4 tsp baking soda per cup. Some other subs I have used are a combo of brown rice flour, sorghum and teff (when doing the combos, you do need to add a tiny bit of xantham gum to keep them from getting flat). Check out the Chocolate Chip cookie recipe I adapted from Gluten Free Girl (forgive the terrible picture please.. he he), it uses those combos.. They are to die for and you would never know the difference!

I really liked the cookies too, not a big chocolate cookie person myself but loved the subtle flavour and the saltiness too.

Shoot Erin!!! That is frustrating, I have had that happen (with the Dorie's sugar cookies & Pamelas). The only thing I can think of that I did with this recipe, is that I let the dough chill overnight. Are you making the baking soda/powder adjustments when using Pam's? I also used Pamela's in the Oatmeal cookie recipe I posted... worked great with those too. Try the overnight thing, and let me know how it goes. Annoying I know!!

i just substituted Pamela's for the AP flour; i didn't add any additional baking soda or baking powder?!?!
after mixing the dough, i put it in the freezer for 2 hrs. maybe it wasn't long enough?
who knows. but you're right, it is frustrating...especially when the batter tastes good :)

OK Erin, going back thru the recipe looking at the baking soda.. it says 1/2 tsp baking soda. Now that I think of it... since there is 1/4 tsp of baking soda per cup already in Pamelas mix, and the recipe called for 1 1/4 c flour (It already has 1/4 + 1/8 tsp in it). I added an 1/8 extra of baking soda to reach the required 1/2 tsp. Did that make any sense at all? Maybe that is what is missing.
